What is hotel operations?

Hotel operations is just what it sounds like: the management of a hotel or hospitality property’s various operations. For example, if you were a hotel operations manager, your job would be to oversee various departments within the hotel operations such as housekeeping, the front desk, reception, guest relations and food & beverage service. In this position, you’d put your social and communication skills to use, meeting guests and dealing with staff.

What will you study?

You will study core focus areas such as personal skills and presentation, safety, customer care, hygiene, fire prevention, and security. You’ll also specialise in the following areas: Food and Beverage Service, Reception Operations and Services, and Accommodation Operations and Services.

In Food and Beverage Service you’ll learn about menu knowledge, product knowledge, general billing procedures, billing and checking procedures, pre-service procedures, table service, silver service, carvery or buffet service, beverage service, and table drinks service.

Reception Operations and Services covers general reception procedures, general front office procedures, advance reservation procedures, guest accounting procedures and selling and marketing techniques.

Accommodation Operations and Services subjects are cleaning procedures, organisation of cleaning, design, décor and furnishings, care of textiles, types of accommodation services, planning and organising the housekeeping service and control in the accommodation environment.

Half of your annual study time will be spent doing experiential learning (practical work experience) at South Africa’s leading hospitality properties. This invaluable experience is one of the reasons companies snap up IHS graduates on completion of their hospitality studies.

What qualification will you receive?

At the end of your hotel operations management course, you’ll receive the following qualifications:

  • City & Guilds Certificate and Diploma in Accommodation Operations and Services: partial completion of the SAQA registered qualification ID 65831
  • City & Guilds Certificate and Diploma in Reception Operations and Services: partial completion of the qualification with SAQA ID 65829
  • City & Guilds Certificate and Diploma in Food and Beverage Operations and Services: partial completion of the SAQA registered qualification ID 73293
  • Cape Wine Academy: Wine Service
  • Basic First Aid Certificate.
